Carrot Cake Donuts for Dogs with Banana “Nice Cream”

As you may know from my other recipes, I love taking “guilty pleasure” foods and re-working them so that they are actually healthy! I’ve done that a couple of times with one of the guiltiest pleasure foods of all – donuts – and in this recipe I do it again with my Carrot Cake Donuts for Dogs. And, with summer in full swing, I decided to “kick it up a notch” by adding a banana “nice cream” frosting to the recipe! My Carrot Cake Donuts for Dogs with Banana “Nice Cream” Frosting are super easy to make and use coconut flour instead of wheat-based flour, making them an excellent hypoallergenic option.

Recipe: Carrot Cake Donuts for Dogs with Banana “Nice Cream” Frosting

Ingredients

Carrot Cake Donuts

  • 1 mashed banana
  • ¼ cup shredded carrots
  • ½ cup coconut flour
  • ½ tsp. baking soda
  • 1 flax egg (1 Tbsp. ground flax seeds mixed with 3 Tbsp. warm water)
  • 1 Tbsp. organic maple syrup
  • 2 Tbsp. melted coconut oil + more for greasing
  • Banana “Nice Cream” Frosting

    • 1 frozen banana
    • 1 splash of light coconut milk
    • Directions
  1. Start by preheating the oven to 350 degrees F and lightly greasing a donut pan with coconut oil.
  2. Next, add the banana to a mixing bowl and mash.
  3. Add in the flax egg, baking soda and coconut flour. Mix well.
  4. Add in the maple syrup, melted coconut oil and shredded carrots and mix.
  5. Pour the batter into the donut pan and bake for 10 minutes or until lightly browned.
  6. Once cooked, allow the donuts to fully cool before removing from the pan.
  7. Now, make the banana “nice cream” frosting by adding the frozen banana and coconut milk to a food processor or blender and blend until a soft serve ice cream consistency forms. Serve with the donuts.
  8. Store the donuts in a sealed container in the fridge for up to 4 days.
  9. Be sure to make the banana “nice cream” frosting right before serving and “ice” the donuts with it.
